I've had a love of stirfry's for years. Ever since I learnt how to cook one in year 8 home economics I've been addicted. I suppose they're a good thing to be addicted to given they're so healthy. T on the other hand doesn't really like them at all so in the past four and a bit years I've hardly eaten them. I indulged in them a lot when I was pregnant and he was doing night shift, but other than that I've missed out. Until lately.
I recently discovered that he actually likes chicken stirfry with cashews and we've found a combination of veggies that he'll actually eat too. Bingo. So naturally I've been running with this at least once a week ever since. He hardly ever eats veggies so this is one of my only ways of getting him to eat them, he's basically just a big fussy child.


For this stirfry I use chicken, onion, broccoli, cauliflower, celery, snow peas and capsicum. I've discovered over many years of trying that these are pretty much the only veggies that T will eat and they go nicely with the honey, soy & garlic sauce. You can of course substitute veggies for others if you like.

The first couple of times I made this stirfry I did cheat and use a packet sauce from the shops. However, I forgot the packet sauce last time we went shopping, but luckily I had all the ingredients needed to make my own sauce in the pantry. I made my sauce with honey, soy sauce, olive oil and crushed garlic. Its actually super easy, I don't know why I was even buying packet sauces.
Making the stirfry is super, super easy {which is probably why I love them}. Literally chop up the veggies and set aside, chop and brown the chicken and then add in the veggies. Top with the sauce and cashews and you're done, basically {see method below}. It's so easy you could even get the men in your life to cook it for you!
HONEY, SOY & GARLIC CHICKEN STIRFRY
PREP 15MIN | COOK 10MIN
Honey, Soy & Garlic Sauce
2 tablespoons soy sauce
1½ tablespoons honey
1 tablespoon olive oil
2 teaspoons crushed garlic {or 2 cloves of garlic}
Chicken Stirfry
1 chicken breast
½ small head of broccoli
¼ small head of cauliflower
2 sticks celery
½ red capsicum
8 snow peas
1 small onion
2 cups rice
unsalted cashews
METHOD
Combine soy sauce, olive oil, honey and garlic into a bowl and stir well. Add extra honey to taste if required.
Stirfry
Dice all vegetables into small chunks and set aside. Cut chicken into strips. Put rice on to boil. Cook onion and chicken until browned. Add vegetables hardest to softest leaving snow peas and capsicum until last. Cook until broccoli turns bright green. Add sauce and cook until vegetables are well covered. Add cashews right at the end. Serve with rice.

DeleteSnap. I love stir-frys, but nobody else really does in this house. If I'm calculating about what i use, I can get away with it once in a while. So annoying because it is healthy, delicious, and easy and economical, and it's very rare to get all 4 of those in one dish.
